Yemisir Watt - Red Lentils (Serves 4-6)

                               Ingredients: 1/2 cup vegetable oil 1-1/2 cups onion, chopped 1 tablespoon Berbere 1 tablespoon ginger, minced or grated fine 1-1/2 cups split red lentil, rinsed  4 cups water 1/2 tablespoon garlic, minced 1/2 teaspoon cumin 2 tablespoons tomato paste (optional) - In a medium pot, cook onion in the oil until golden yellow. Add the berbere spice, ginger, lentils, and 1 cup of the water, stir to combine. Cook for 10-12 minutes over medium heat, stirring occasionally with a wooden spoon adding more water as needed.
